Real burritos at home
So this weekend has been great. Two parties involving costumes, food and friends. I can’t think of a better way to spend a weekend, except for one that involves a couch and entire season of Arrested Development on DVD. Oh wait, I squeezed that in there too…
Despite all this excitement, I managed to discover how to make a real burrito at home. No, I’m not talking about taking your usual Safeway tortilla and wrapping some beans, rice, and meat in it. What I’m talking about is more the burrito you get from your favorite local taqueria. Granted, in the end it would be easier to go to that taqueria, but it wouldn’t be nearly as satisfying. To do this you will need:
- Flour tortillas that are 15″ in diameter. You’ll probably need to go to a Mexican grocer.
- Find a pan or grill capable of accommodating a 15″ tortilla.
- The Mexican Rice from ATK.
- Your favorite beans. I like whole pinto beans.
- Cheese, such as monterey jack cheese and or cheddar.
- Guacamole.
- Cilantro.
- Lime.
- Meat (optional). I prefer some homemade carnitas.
Once you have all the ingredients, warm up the tortilla on the pan or grill. Add the cheese. Once the cheese is almost melted, add the rice beans, guac, cilantro and a squeeze of lime. Fold in two sides of the tortilla and then roll. Wrap the burrito in aluminum foil, and voila…a burrito like the one you get from your favorite taqueria. Granted this one took 8 hours to make, but isn’t it satisfying?
